Workshop led by fermentation expert Rachel De Thample to mark her new book, with a forage in Petersham Meadows, making kimchi, fermented pesto, a sourdough starter and winter bitters.
Rachel De Thample is hosting a forage and ferment day at Petersham Nurseries on Tuesday 3 November, from 10:30 am to 3:30 pm. The day marks the launch of her new book, The Fermentation Year: Everyday techniques and recipes to rewild your microbiome, and she'll be leading the whole thing herself.
It starts out in the open: a forage through Petersham Meadows and the nursery's own gardens, where you'll gather the wild greens that go into the making. From there, the group moves into a glasshouse for the fermentation part. De Thample guides everyone through four different ferments to take home: kimchi, a fermented pesto made from those wild greens, a sourdough starter, and winter bitters. Once the bitters are sorted, she shows how to use them to make a kombucha negroni.
Lunch is handled by the Petersham Nurseries chefs, served with tasters of De Thample's green tomato kimchi, a recipe from the new book. The whole thing runs from mid-morning until mid-afternoon, so it's a full day's commitment rather than a quick drop-in.
