Beginner workshop with Ian Edwards on storing wild foods and making Scandinavian-inspired gifts from foraged materials and reclaimed wood.
Ian Edwards is leading a workshop called What To Forage In Winter at the Royal Botanic Garden Edinburgh on Saturday 21 November, from 10:15 to 13:15. It's a morning session that starts with a simple idea: as autumn's bounty fades, winter is the season to preserve and create.
Over the three hours, you'll look at how to store fruits, seeds, mushrooms, seaweeds and other wild foods to see you through the darkest months. There's a practical side to it too: you'll follow a traditional Scots recipe to make an elixir for warding off winter colds, and work with foraged materials and reclaimed wood to make Scandinavian-inspired gifts and seasonal decorations. Edwards frames the whole thing as a celebration of resourcefulness and creativity in the leanest season, and it's open to beginners aged 16 and over.
The setting has its own weight. The Royal Botanic Garden Edinburgh was founded in the 17th century as a physic garden and now spans four gardens with a world-renowned living plant collection. It's more than 330 years of growing and studying plants, with a mission of 'exploring and explaining the world of plants for a better future'.
