Seven-course pairing dinner with Moody Tongue beers and seasonally inspired dishes from executive chefs Todd Goodwin and Zach Warn.
FYR Short North is hosting a seven-course pairing dinner on Thursday, November 5, with Moody Tongue brewmaster Jared Rouben and executive chefs Todd Goodwin and Zach Warn. It's a night built around the intersection of brewing and cooking, with each course paired with a curated Moody Tongue beer.
Rouben describes his approach to brewing as culinary, and Moody Tongue is known as the world's only Michelin-starred brewery. That culinary angle is the whole point of the evening: the beer isn't just an accompaniment, it's treated as part of the dish. The menu runs through seven courses, starting with wood-fired focaccia and moving into ember-roasted roots, heritage pork, and dry-aged beef, before closing with a honeynut squash dessert. Each one is paired with a specific Moody Tongue beer selected to match.
Goodwin and Warn are the chefs behind FYR, and the menu leans into the wood-fired cooking the restaurant is known for. The progression from the early, lighter courses to the heavier meats and the final dessert means you'll be working your way through a full meal, with the beer pairings shifting along with it. Having the brewmaster there in person gives you a chance to hear how the pairings were put together.
