Cider and cheese pairing workshop led by Claire Trindle of Blind Bear Beverages at the Philly Cheese School.
Claire Trindle of Blind Bear Beverages is leading a cider and cheese pairing class at the Philly Cheese School on Wednesday, October 28, from 6 PM to 7:30 PM. She'll be joined by the school's own Alex Stanton, so you've got two perspectives on the table: one on the cider and one on the cheese.
Trindle, who goes by 'Blind Bear Claire,' is Pennsylvania's first and only woman Certified Pommelier—a credential from the American Cider Association—and the only Philadelphian currently holding it. Through Blind Bear Beverages, she runs immersive workshops that walk you through the nuances of flavor discovery and the science of food pairings. She also puts on the 'Carl & Friends' Cider Dinner, a cider cocktail and multi-course dinner paired with cider. She's a vocal advocate for local ingredients, often pointing out that Pennsylvania is the fourth-largest apple-producing state in the country, and she's committed to sustainability, using every part of the ingredients she works with and composting the rest.

On the night, the focus is on pairing cider with cheese, with Trindle and Stanton guiding you through the tasting. It's a good chance to see how the two work together, and the tasting is entirely gluten-free and suitable for celiac individuals. The class runs from 6 PM to 7:30 PM at the Philly Cheese School, 701 S 9th St, Philadelphia, PA 19147.
