Informal workshop with Ruth Munro of Edinburgh Fermentarium on how to brew kombucha at home, with tastings and a jar to take home.
Edinburgh Fermentarium is running a kombucha workshop on Saturday 24 October, from 11:00 to 12:15. It's part of a series of friendly, informal classes run by founder Ruth Munro, who teaches how to make healthy, artisan fermented food at home. This one focuses on kombucha, a naturally effervescent fermented drink made from sweetened tea and a SCOBY — short for symbiotic culture of bacteria and yeast. The session walks you through how to brew it yourself, with plenty of tastings of kombucha and other fermented foods and drinks along the way.
There's a bit of science to it too: the growing link between gut probiotics and immune function, which Munro says is becoming clearer as more studies focus on gut health. You'll leave with a 1L jar of tea and your own SCOBY to keep fermenting at home, and all the ingredients and jars are provided. People who've done her other fermenting workshops, like Kimchi and Kraut, have described them as fun, well-organised and full of tastings.
