Intimate 18-seat omakase dinner by Chef Jason Liang at O by Brush pairing Japanese cuisine with IWA sake releases.
Brush Sushi is hosting an intimate 18-seat omakase dinner on Wednesday, November 4, bringing together Chef Jason Liang of O by Brush and IWA sake. It's a one-night collaboration that puts Japanese cuisine and a fine-wine approach to sake on the same table.
Chef Jason Liang will serve a multi-course menu rooted in the restaurant's progressive style. You'll see dry-aged seafood, pristine seasonal ingredients, binchotan charcoal, smoke, dashi, and Edomae-inspired techniques. Each course is built around aging, temperature, texture, and preservation, so the meal moves through different ways of treating the ingredients rather than just a sequence of plates.
Pairing with that is IWA, a sake created in Toyama by Richard Geoffroy, the former Chef de Cave of Dom Pérignon. Geoffroy brings the art of Assemblage—the blending of different vintages and parcels—to sake, treating it more like a fine wine than a standard brew. Throughout the evening, you'll taste multiple IWA releases served at different temperatures and in different vessels, so you get to see how the same sake changes depending on how it's poured.
