
A hands-on masterclass teaching traditional sugar boiling and chocolate tempering techniques to create confectionery centres, suitable for all ages with dietary considerations.
York Cocoa Works are running their Fondants - Traditional Confectionery Chocolate Centres masterclass on Saturday 12 September, and it's one of those sessions that actually lets you get your hands dirty. It's not just a demo; you're in there doing the work yourself.
The morning is all about the traditional techniques of sugar boiling to create confectionery centres. You'll learn sugar crystallisation for smooth fondant creme centres, how to temper chocolate to mould the shapes that get filled, and how to wrap and package everything up so it's ready to take home. It's a proper look at how those classic filled chocolates are actually made, from the boiling point to the final wrap.
You don't leave empty-handed, either. You'll walk away with roughly 350g of your own filled chocolates and the recipes to make them again. The whole session is dairy-free and vegan-friendly, and they cater for gluten-free, nut-free and dairy-free diets, so you can let them know what you need beforehand. It's open to all ages, though children under 12 need to be accompanied by a full-paying adult.
