The Black Swan at Oldstead is running an autumn preservation workshop and overnight stay on 1 October, with a second date on 12 November. It's an afternoon spent with the inn's foraging and preservation team, working through 'The Art of Preservation'—fermentation, pickling and other traditional techniques. They use ingredients the kitchen and bar grow, forage and preserve throughout the year as part of the restaurant's 'Preserving Season', so you're working with the same produce that ends up on the plates.
It's not just the workshop, though. You stay the night at the inn, sit down to the restaurant's Michelin-starred tasting menu, and wake up to an Oldstead breakfast the next morning. You also take home an Oldstead preservation pack and a copy of chef Tommy Banks' Roots cookbook, so there's something to carry back with you.
