A three-course meal pairing local chefs Trinh and Thai Nguyen with FareStart students, with all revenue supporting job training and placement programs.
Chefs Trinh and Thai Nguyen are taking over the FareStart Restaurant on Thursday, November 5, for another Guest Chef Night. The evening runs from 5 PM to 9 PM, and the ticket is $60.
If you haven't been to one of these, the format is a bit different from your usual dinner. FareStart pairs established local chefs with their students to put together a three-course meal, which is then served by community volunteers. All the revenue and donations from the night go back into FareStart's job training and placement programs. It's a series that's been running for a while—some regulars have been coming for more than 20 years—and the whole thing is built around the organization's mission of transforming lives and disrupting poverty through food, life skills, and job training.
Trinh and Thai Nguyen bring a specific story to the kitchen. Born in Vietnam, they spent seven years in a refugee camp in Thailand before arriving in Seattle in 1989. Their paths to cooking were different: Trinh is self-taught, having learned by cooking alongside her mother, while Thai graduated from the Institute of Culinary Education in New York and trained under Daniel Boulud at Restaurant Daniel. Together they opened Ba Sa on Bainbridge Island in 2019 and Ramie in Seattle's Capitol Hill in May 2024, which Seattle Met named one of the city's Best New Restaurants of 2024.
