A hands-on pasta-making class where participants learn to make traditional Sicilian busiate and enjoy a three-course lunch with wine pairings.
Yolan is hosting a Busiate Pasta-Making Class and Lunch on Friday, October 9, from 12 PM to 2 PM at The Joseph, A Luxury Collection Hotel, 401 Korean Veterans Blvd. It's a two-part afternoon: you spend the first half in the kitchen learning to make a specific Sicilian pasta by hand, and the second half eating a full meal.
Busiate is a hand-rolled pasta from western Sicily, closely tied to Trapani. It's made from semolina flour and water, and each strand is traditionally wrapped around a slender ferretto—a thin rod—to give it that signature spiral shape. Inside Yolan's kitchen, the restaurant's chefs walk you through the shaping technique and the regional traditions behind it, including its classic pairing with pesto alla Trapanese, a vibrant specialty rooted in the flavors of Trapani. Everyone makes their own fresh busiate to take home, and you'll get the recipes and methods to recreate it on your own.
Once the lesson wraps, the afternoon shifts to a three-course lunch. It starts with a seasonal salad, followed by busiate with pesto alla Trapanese prepared by Yolan's culinary team, and finishes with dessert, with curated wine pairings throughout. You'll walk away with a batch of fresh pasta for your own kitchen and a full meal in your stomach.
