Wood, Fire & Vine: A Sicilian Summer Feast comes to Hotel du Vin on Thursday 20 August, an open-air dining experience that brings a taste of the Mediterranean to the heart of Brighton. It's run in partnership with Planeta Wines, and the whole thing is served al fresco on the hotel's terrace, so you'll be eating outside.
The set menu is built around wood-fired cooking, and the main course is a trio of three different meats and fish all coming from the fire: 28-day aged rib of beef, Yorkshire herb-fed chicken, and whole roast seabass stuffed with lemon and fennel. That's served alongside Sicilian caponata, and the meal starts with a spread of vibrant antipasti to share. It's a set menu, so you'll get the full run of it rather than picking and choosing.
Because it's al fresco on the terrace, the weather will play its part, and the wood-fired theme runs through the whole meal. The partnership with Planeta Wines means the wine is as much a part of the evening as the food, with the Sicilian influence running from the caponata through to the drinks. It's a single-evening event, not a regular fixture, so it's one of those things you have to book for a specific date.
