If you have been looking for a way to spend a Saturday morning in Brighton, Riddle & Finns is hosting an Oyster Master Class on March 28th. The session takes place at their venue in the Kings Road Arches, starting at 10:30 am. Over the course of 90 minutes, the class covers the history and provenance of oysters, helping participants understand the differences between various species found along the British and Irish coasts. The primary focus is on the practical side of the craft, where you learn the technique of shucking under expert supervision.

The experience begins with a Bloody Mary and a glass of English sparkling wine, setting a relaxed tone for the morning. As you move through the session, you sample a variety of oysters, including both raw and cooked preparations. Because the event falls in March, you will be tasting native oysters, which are in season from September through April, alongside rock oysters. This provides a clear look at how seasonality affects the availability and flavour profiles of the shellfish. The class is structured to guide you through the process of opening the shells safely, which is a useful skill if you enjoy preparing seafood at home.
The cost for the session is £85.00 per person. To help you practice what you have learned, the organisers provide a goody bag to take home. This includes an oyster knife, an expert apron, and a stainless steel mesh glove, along with a printed manual from the class. They also include a bottle of spicy tomato mix from Pickle House and a pilsner brewed by Riddle & Finns in collaboration with Unbarred. It is a practical approach to learning about seafood, suitable for anyone interested in the technical aspects of preparation or simply curious about the process behind the dishes served at the restaurant.
