Uchibā Austin brings back its Uncommon Ramen pop-up on Monday, August 3, with guest chef Connor Garbo taking over the bowl for one night. If you've been around the Austin food scene for a while, you know the drill: the restaurant pairs its house ramen with a visiting chef who brings their own signature flavors to the mix, and this edition is no exception. Garbo's take is inspired by a classic Cuban sandwich, so expect those flavors—ham, roasted pork, Swiss, pickles, and mustard—reimagined in ramen form.
It's a monthly series, but it only runs for one night at a time, and this is the August installment. The format is the same as always: the house ramen serves as the base, and the guest chef builds on top of it. Because it's a pop-up, the special is only available while it lasts, and it's gone once the night is over. If you're coming for the ramen, it's worth keeping in mind that this is a one-off, not a permanent menu addition.

The evening runs during dinner service only, from 4 PM to 10 PM at Uchibā Austin, 601 W. 2nd St. in downtown Austin. Reservations are encouraged, but walk-ins are welcome, so you can either book a table or just swing by and hope for a spot. Since it's a Monday night, it's a good excuse to get out for dinner early in the week.
