A curated four-course harvest dinner with pairings of Opus One and Overture wines at The George, featuring a winery ambassador.
The George is hosting a Winemakers Dinner with Opus One on Tuesday, October 20, as part of its Winemakers Dinner Series — Fall Edition. The night centers on Opus One, the Napa Valley winery, with an Opus One winery ambassador on hand to lead the pours and talk through the bottles. It's a four-course harvest dinner, and the main course is served side-by-side with the 2015 and 2023 vintages, so you can taste them together and see how the two compare. Every guest also goes home with an Opus One gift box.
The dinner takes place at The George, the Fairmont Olympic's modern take on a brasserie. The room has been a Seattle social hub since it opened as The Georgian in 1924, and it still carries George B. Post's original architecture alongside a more recent redesign. Executive Chef Guillermo Carreno leads the kitchen, and the space has hosted a long list of guests over the decades, from fashion icons to legendary musicians. The hotel itself was named one of the Top 500 Hotels in the World in Travel + Leisure's 2026 World's Best Awards.
