Culinary class to make Vietnamese crepes with Chef Annie Elmore at Hot Stove Society.
Chef Annie Elmore is teaching a class on Vietnamese crepes at Hot Stove Society on Saturday, October 17. It's a hands-on session, so you'll be making the crepes yourself rather than just watching her do it.
If you're not familiar, Vietnamese crepes—known as bánh xèo—are a distinct take on the crepe. They're savory, yellow from turmeric, and usually filled with pork, shrimp, and bean sprouts. The name bánh xèo actually comes from the sizzling sound they make when they hit the hot pan, which is a good hint at how they're made: thin, crisp edges and a softer center. You eat them by wrapping pieces of the crepe and its filling in large lettuce leaves, often with fresh herbs and a dipping sauce on the side. It's as much about the fresh greens as it is about the crepe itself.
Elmore will walk you through the process, from mixing the batter to getting the fill and the fold just right. Since it's a class, you'll get to work through the steps yourself, and you'll leave knowing how to put one together at home. If you've always wanted to make them but weren't sure where to start, this is a straightforward way to pick it up.
