A cooking class teaching how to make masa dough and handmade tortillas with carnitas, black beans and cabbage slaw.
Chef Bridget Charters is leading a masa masterclass at Hot Stove Society in Seattle on Saturday, October 10. It's a hands-on session that starts with the basics: how to make masa dough from scratch and how to press and cook handmade tortillas. If you've only ever bought your tortillas in a pack, this is the part where you actually see how they come together.
Once the tortillas are ready, the class moves into building a full meal around them. You'll be making carnitas—slow-cooked, shredded pork—along with black beans and a cabbage slaw to top it all off. The tortillas you made yourself serve as the base for the whole thing, so you're walking away with both a skill and a meal.

It's the kind of class that works whether you're a complete beginner or someone who already spends a fair amount of time in the kitchen. You'll get to work through the process from the raw dough to the finished plate, and you'll leave knowing how to recreate it at home. The class runs at 1:30 PM on Saturday, October 10, at Hot Stove Society in Seattle.
