
An intimate four-course Vietnamese dinner with award-winning chef Thuy Diem Pham, featuring recipes from her cookbook One Pan Vietnam.
Thuy Diem Pham is taking over Boathouse 4 Kitchen on Thursday 24 September for a four-course Vietnamese dinner. It's an intimate one, with the menu drawing on recipes from her latest number-one bestseller, One Pan Vietnam.
Pham is an award-winning Vietnamese chef, author and restaurateur who grew up in southern Vietnam. She didn't start out in the kitchen, though; she left a career in advertising to train as a chef, and together with her husband ran The Little Viet Kitchen in Islington for nine and a half years. Since then she's written three number-one bestselling Vietnamese cookbooks, taught the cuisine, appeared on television, and done live cooking demonstrations at festivals like Rock Oyster, Pub in the Park and CarFest. She describes her approach as grounded in discipline and precision, with a focus on clarity of flavour.
There are a couple of dishes she talks about with particular affection. Her signature is Bún Bò Huế, which she says her mother cooks for her every year on her birthday, and her favourite is Bún thịt nướng, a traditional southern Vietnamese grilled meat and cold noodle dish. The dinner will be built around recipes from One Pan Vietnam, so it's a good chance to see those flavours come together in person.

Boathouse 4 Kitchen is in the Portsmouth Historic Dockyard, where it serves an all-day menu by award-winning chef Ruth Hansom and looks out over the harbour. The dinner starts at 7pm on Thursday 24 September and costs £65 per person, bookable online with payment taken at the point of booking.
