Five-course seasonal tasting menu by chef Johnny Cliff paired with five sherries from Bodegas Gonzalez Byass, guided by a sherry expert, for International Sherry Week.
Ambiente Tapas is hosting a Sherry Week dinner on Thursday 5 November, part of International Sherry Week, the global celebration of Spain's fortified wine. It's a five-course seasonal tasting menu by Executive Chef Johnny Cliff, with each course paired with a different sherry from Bodegas Gonzalez Byass. The night runs from 18:30 to 22:00 at 36-38 The Calls, LS2 7EW.
Over the course of the evening, you work your way through the full range of sherry styles, from the crisp finos to the rich olorosos, each one paired with a course from the seasonal menu. It's a good way to see how the different styles sit against different flavours rather than just sticking to the one you know. The whole thing is guided by Rob Scott-South, a Gonzalez Byass Sherry Expert and Sherry Knight, who'll be sharing stories and tales from the sherry cellars as the pairings unfold.
If you've only ever had sherry as a sweet glass at Christmas, this is a fair chance to see what else it does. The range goes from the dry, pale finos to the darker, nuttier olorosos, and the pairing format lets you taste them one after another rather than all at once. Between the courses, Scott-South will be talking through the styles and the history behind them, so you'll leave with a decent handle on what actually makes a sherry a sherry.
