A seasonal workshop exploring elderflower foraging and learning to make homemade cordial and sparkling elderflower champagne.
If you have been looking for a way to spend an evening outdoors this June, there is a workshop happening on June 12th that focuses on the seasonal foraging of elderflower. The event, titled Brighton’s Hidden Hedgerows: Elderflower & Fizz, is part of the 'City Uncovered: Brighton' series, which runs from June 1st to June 14th, 2026. It takes place at The Wee House in Stanmer, specifically from 18:00 to 20:30.

The session is led by Christian and is structured as a guided walk through some of Brighton’s green spaces to identify and collect elderflowers. Once the foraging part is complete, the focus shifts to the practical side of things: learning how to turn those flowers into homemade cordial and sparkling elderflower champagne. The workshop covers the entire process, from the initial gathering on the branch to the final bottling stage. It is a hands-on approach for anyone interested in the mechanics of making these drinks at home.
Beyond the technical side of the brewing process, the session includes a tasting of elderflower and nettle iced tea. There is also a segment dedicated to discussing how to incorporate these flowers into various desserts and other recipes. The entry fee is £35.00 per person. Given the nature of the activity—which involves walking, foraging, and a workshop on alcohol production—it is geared towards adults who have an interest in nature, foraging, and artisanal food preparation.
