
If you are looking for a new spot to enjoy the summer weather in Brighton, a fresh pop-up has just arrived in the heart of the city. Throughout July and August 2026, the Royal Pavilion Rooms are hosting the Roebuck Sparkling Wine Bar. This is Brighton's first dedicated English sparkling wine bar, brought to us by the West Sussex-based producer Roebuck Estates. Located right next to the Royal Pavilion, the bar features an outdoor terrace with direct views of the landmark, making it a great spot to unwind after a day of wandering around the Lanes or sitting on the beach.

The setup is accessible through the Royal Pavilion Gift Shop, which also means you can pick up a bottle to take home if you find something you particularly like. The bar is open from Wednesday to Sunday, starting at 12:00pm and running until 9:00pm, with later closing times on the weekends. It is a straightforward, relaxed space where you can try award-winning local vintages by the glass or the bottle, including some selected magnum vintages. If you want to compare different styles, they offer curated wine flights featuring three different sparkling wines.
This summer partnership goes beyond just serving drinks on the terrace. Roebuck Estates is the official sparkling wine partner of Brighton & Hove Museums for 2026, and they are planning a series of collaborative events. Throughout the season, the bar will host exclusive food-pairing events in partnership with local restaurants and producers, highlighting the city's food and drink scene. It is a great opportunity to taste how local Sussex sparkling wine pairs with regional food without having to travel out to the vineyards in Petworth.
