Austin's cocktail scene has been paying closer attention to drinks without alcohol, and the results now go well beyond soda and lime. Some places build their zero-proof menus with the same care as their regular ones. The most unusual stop may be Sans Bar at 918 Congress Ave, Suite 100. Founded in 2017 by Chris Marshall, a substance-use counselor who has been sober since 2007, it is billed as the first dedicated non-alcoholic bar in North America. It opens only on Fridays, from 6:00 PM to midnight, and most Friday nights bring live music starting at 8:00 PM. The menu includes a Pecan Praline Old-Fashioned, a spirit-free Mezcal Ranch Water, and the Garden Dandy, which is built on Ritual Zero Proof gin.

Downtown, The Roosevelt Room at 307 W 5th St has been around since 2015 and keeps three signature non-alcoholic cocktails on its list. The NA'Groni combines verjus rouge and gentian tea, while the Glitter & Marigold leans on orange flower water, pistachio and vanilla. The Castaway is a more tropical pick, with fresh mint, cucumber, coconut cream, spicy ginger beer and a sweetgrass tincture. A few blocks away, Codependent Cocktails + Coffee offers the Well Manoered Monk, made with non-alcoholic tequila, cucumber and pineapple, and the coconut water-based Tell Me Something Good. The bar also pours non-alcoholic beer from Athletic Brewing. At Garage Cocktail Bar, 503 Colorado St, the menu includes an "Unleaded" section built around Seedlip. Its Serene Dream mixes aloe, cucumber, lime and the garden spirit from Seedlip, and the Seedlip Milk Punch brings in fig, pineapple, coffee and citrus.
On the east side, Parley on East Cesar Chavez opened in late December 2025 and serves until 2:00 AM, from 11:00 AM. Its non-alcoholic drinks sit alongside cocktails priced from $10 to $16. The Penichillin' is a version of the classic Penicillin made with pear, honey, ginger and lemon, and The Beetrooter combines beetroot, carrot and cinnamon. Over at Hillside Farmacy, 1209 E 11th St, the "Soda Fountain" menu offers house-made syrups and herbal blends, and every drink can be ordered with or without alcohol. The Pickpocket pairs strawberry, basil and balsamic vinegar, while The Country Doc, made with ginger, fresh apple and cinnamon, can be served hot or cold. The Turmeric Black Pepper Soda can also be ordered with CBD added.
South of the river, Armadillo Den at 10106 Menchaca Rd has a patio bar that offers a draft non-alcoholic cocktail program, which is uncommon in Texas. The Frescadillo Paloma and the Ford's Ranch Water, made with Thai herb sparkling water, cucumber and lemon, are good ones to try there. Further down, Loro at 2115 S Lamar Blvd has a zero-proof menu with the Phony Negroni at $10.00, the Spicy Cucumber with yuzu and ghost agave at $7.00, and the K-Tonic Kombucha at $5.00. The restaurant is open Friday and Saturday until 11:00 PM and until 10:00 PM the rest of the week, so it is easy to fit in before or after dinner.
