Roebuck Estates are opening a pop-up sparkling wine bar at The Royal Pavilion Rooms this summer, and it's more than just a few bottles on a shelf. It runs throughout July and August, Wednesday to Sunday, 12pm to 9pm, with later closing times at the weekends. The bar is right next to the Royal Pavilion, and you get to it through the Royal Pavilion Gift Shop.
On the menu is Roebuck's Classic Collection, which you can have by the glass, by the bottle, or as a magnum if you're in for a proper session. There are also curated wine flights, so you can work your way through a few different ones in one sitting. And when the sun goes down, they're running evening food-pairing events with local restaurants and producers, so you can pair the bubbles with something to eat.
For a bit of context, Roebuck Estates is a West Sussex sparkling wine producer based in Petworth, and they're the official sparkling wine partner of Brighton & Hove Museums. This pop-up is the first long-standing, dedicated English sparkling wine bar created by an English sparkling wine producer. The whole idea is to bring the vineyard experience — the kind you usually get overlooking the South Downs — right into the city. The bar has a terrace overlooking the historic palace, so you've got a view of the Pavilion while you drink.
